trim tumHere in Birmingham butternut squash is in scant supply at the moment, so this soup is sadly missing from our lives. We ate it all and felt sick, but you could easily stretch this to fill four normal people.



This recipe needs two pans. Sorry. A big pan and a little pan. It's quicker than it looks though.

In the big pan . . .
  • Half a big butternut squash or a whole petite one chopped into 1" cubes;
  • Three large-to-giant baking potatoes in the 1" format;
  • Half a block of dried cream coconut (2"x 2" x 2");
  • About 2 pints of water;
  • A couple of teaspoons of bouillon powder, a couple of stock cubes or something to that effect.


Boil this stuff until it's mushy (about 20-30 minutes), mash it up a bit with a potato masher, then stir in the contents of the little pan.

In the little pan . . .
  • Bit of olive oil, sesame oil or butter;
  • A red pepper sliced however you like it;
  • Two finely chopped onions;
  • Five, yes, five cloves of garlic;
  • One or two finely shredded red chillies or a good slug of hot pepper sauce;
  • Black pepper;
  • Two tablespoons of tamari or soy sauce if you must;
  • One and a half tablespoons of ground cumin.


Fry this up, but adding the tamari and cumin just before you add it all to the big pan.

Goes well with country rock and crusty white bread.
