Mmm. Get ready for the red soup.
It's harvest time in my grandad's garden, so me and the souptaster trot off home with a small wicker basket chock full of goodness. Vegetable of the season is beetroot, so this soup will ruin your t-shirt and burst your buckle all in one.


In the big pan:
Slice a medium onion and cook gently for a bit in a lot of olive oil and butter;

Then chuck in:
  • Four cooked large beetroots (they take about thirty to forty minutes to get nice)
  • Half a dark cabbage (something like savoy), shredded and steamed
  • About a pound of cooked new potatoes, roughly chopped
  • The juice of one juicy lemon
  • Two tablespoons of chopped fresh thyme (or a couple of teaspoons of dried)
  • Two tablespoons of chopped fresh chives (can you get dried chives?)
  • Four cloves of garlic, shredded or something.

Mix around for a minute, then add a pint of stock

Stir in two teaspoons of wholegrain mustard.

Simmer gently for say ten minutes and then leave it for as long as you can - it's nicer luke-warm. Pour a lot of yoghurt on the top and use a lot of pepper.

As this is a soup that demands an upright, formal eating position, take the time afterwards to discuss current affairs. What is up with that Australian Prime Minister?
