An easy soup with a taut t-shirt rating. Just cook up everything except the stock and brandy for about five minutes, add the liquid then simmer for about quarter of an hour.

I blended it a bit so it would go in a flask, but you might want to leave it chunky. This amount meets the soup needs of three.

What you need for this soup:
  • Half a pound of sliced mushrooms (don't go washing them);
  • Half an ounce of butter;
  • Olive oil;
  • A handful of dried mushrooms;
  • Half a tablespoon of tamari or soy;
  • Yes you need tabasco;
  • A tablespoon of chopped tarragon (less than a teaspoon of dried);
  • Two cloves worth of crushed garlic;
  • Two teaspoons of honey;

  • A tablespoon of brandy (or sherry);
  • One and a half pints of stock;
  • Pepper to taste.

    The brandy/garlic/tamari/tarragon thing is mmm nice and comes from a Cranks (Nadine Abensur (1998) Cranks Light. London: Seven Dials.) recipe for pasta. If you can't get tarragon, try rosemary, but use much less.
