here we are in pontevedra and we can only think of soup. They don't sell red wine after 12pm, and we donīt know why. This soup should be taken in delicate quantities, or used as a sea to surround your island of risotto. On your island might also grow little stunted trees of burnt halloumi cheese. Aah.

  • A pint of frozen petit pois or garden peas,
  • Tabasco or small red chilli,
  • A few cloves of garlic,
  • Up to four tablespoon of vodka or tequila,
  • A good handful of fresh mint or two teaspoons of dried mint,
  • Salt and pepper,
  • Consider buying some halloumi.


Ok. In the medium pan:

  • Fill a pint jug with frozen petit pois or garden peas and get it on the boil with enough water to cover.
  • Add a few cloves of crushed garlic and a bit of salt and pepper, a slug of tabasco or the minced chilli and the mint.
  • Boil up until the peas are cooked (about three minutes from when they start boiling).
  • Blend and check to see if you need to add more water or seasoning. If your peas are rubbish, add half a teaspoon of sugar.
  • Stir in two to four tablespoons of vodka or tequila. Steady.
  • If you want to drive or operate machinery, you should cook this up for a couple of minutes to boil off the alchohol.


If you want to dip in little strips of halloumi, here is how to prepare them:
Drain off the liquid from the halloumi, chop into slim ladies little finger sizes and either grill (broil?) or griddle it until it has burnt bits but is not totally black.
