trim tumChristmas is coming and the brussel sprout will soon enjoy its finest hour. In Britain anyway.


If you have a good pan, this will stay within the trim tum limits as you won't need much oil. This is going to kick off the annual Soup Towers Boxing Day Banquet, but the quantity here serves only two brussel lovers.

The smokiness comes from the smoked tofu and the smoked paprika. If you can't get either of these, erm, give up.

I hear that bacon is nice with the brussel too, but I don't want to nudge you in that direction.

OK, you need:
  • Two good handfuls of peeled and sliced brussels;
  • About 4oz of smoked tofu, in very thin slices;
  • One and a half to two pints of weak stock;
  • Dash of Tabasco;
  • A dark sesame oil;
  • Half a teaspoon of hot smoked paprika;
  • A bit (half inch?) of fresh ginger chopped or grated;
  • Tamari or soy to serve.
You could add a small amount of (cooked) rice noodles if you're bulking up for the cold snap.

So:
On a medium heat, fry the tofu in a flat pan that's had a wipe over with sesame oil. Don't poke and fiddle with it, just let it frazzle a bit, then flip it and drop it on some kitchen roll.

Stir fry your brussels in about a tablespoon of sesame oil until they're a bit brown on the edges, then add all other ingredients except the tofu and tamari (and noodles if you're having them).

Simmer for ten minutes, and add the tofu and your optional noodles, and serve up with soy sauce.
