These days I work from home a lot, affording plenty of opportunities to eat in a manner that does not befit the public arena of workplace dining. Eating etiquette has loosened up somewhat in recent years, but it hasn't yet embraced the unruly noodle.

You can really make a mess with this soup.

In the solo-portion-proportioned pan:
  • A small handful of any of these fine vegetables shredded finely:
    • Mushrooms
    • Spring onions
    • Carrots
    • Onions
    • Chives
    • Cabbage (the premium choice)
  • A pint of none-too-salty stock;
  • A half inch bit of peeled ginger grated or sliced;
  • A clove or two of garlic finely sliced;
  • Half to one teaspoon of sesame oil;
  • Black pepper;

The last four ingredients:
  • Handful of dried noodles (use any type and a larger amount if you want to move over to the non-soup style luncheon);
  • Soy sauce or tamari to taste;
  • Maybe some chilli sauce or Tabasco-type product in a minute quantity;
  • Cheeky squeeze of lime if you have any.

This is so fast…

Get the stock boiling on a low heat and add all the ingredients except the last four. Cook for a minute or so according to your choice of featured vegetable;

Add the noodles and cook them in the stock mixture according to the packet. You might need to add more stock to sink the noodles. Add the last stuff to taste and enjoy whilst attending to the lunchtime news broadcast.

No need for bread products, just a change of clothes.
