trim tumWash up the large pan you used last week, and get the first four ingredients on the boil straight away.

Measure out and lob in the other ingredients as you go through the list.



  • Ten to twelve carrots of average stature, peeled and chopped into half to three-quarter inch rings (if you can get organic carrots you don't need to peel them;
  • Three pints of vegetable stock;
  • Four heaped tablespoons of pearl barley;
  • Two medium onions, in chunky slices;
  • Two good teaspoons of wholegrain mustard;
  • Two good teaspoons of honey;
  • A teaspoon of balsamic vinegar if you like;
  • A heaped tablespoon of chopped fresh thyme (if this is beyond your means or the vision of your greengrocer use a flat teaspoon of dried thyme);
  • Four or five cloves of garlic, crushed or chopped;
  • Dash of tabasco;
  • Salt and pepper.

This should take about an hour, and you might need to add a bit more hot water as you go. The barley should be nice and soft.

If you have any white wine kicking around you could use it to replace some of the stock, but this should not lead you buy white wine against your will. Thyme, by the way, is very easy to grow in bright sunshine.

Select the companion bread of your choice, or maybe a nice baked potato, find the butter and switch on the bluegrass.
