This is a fine soup, distinguished by it's so far unique strained buckle rating.




In the big pan:
  • Get a good glob of butter on the go, then slowly fry
  • a sliced onion
  • four or five cloves garlic, sliced, chopped, whatever
  • a pound or so of sliced mushrooms (don't go washing them unless they're toxic)

Cook these until darkly bronzed, then stir in a couple of tablespoons of flour (I used wholemeal but use whatever flour you've got);

Add a pint of water,half a pint of white wine, and half a stock cube or a teaspoon of bouillion powder;

Stir in a tablepoon of tamari, a good slug of tabasco and a good handful of chopped fresh parsley (or try rosemary or tarragon).

Stir in a few tablespoons of cream.

Bubble along discretely for ten or twenty minutes then add some ground pepper and maybe a tiny bit of of salt.
