Get down the shops for:

  • A piece of smoked haddock - or similar - as big as your forearm;
  • A pint of semi-skimmed milk;
  • Six or seven small to medium potatoes;
  • Three or four sticks of celery;
  • Butter;
  • Smoked paprika.


In the two pans:

Peel and slice the potatoes and get them on the boil. Relax for five or ten minutes, then slice the celery finely and fry it gently in some butter in another pan. When the celery is beginning to soften, chuck in the milk and bring carefully to the boil. Throw in the whole fish and gently simmer until the fish is cooked.

This should take about seven minutes. By this time, if not before, your potatoes should be done, so drain them and put them aside whilst take the fish out of the milky pan and flake it from the skin. Chuck the skin in the bin and the fish in the pan.
Watch out for kitties. Add ground pepper and smoked paprika to taste (Looking at you, I'd say you'd want about half a teaspoon) and add the potatoes.
